Makes 14 crepes/pancakes.

If / when I make them again, I’ll probably add in 1 teaspoon vanilla extract to sweeten them a little more.

Put the eggs and almond milk in a blender and mix. Don’t over mix the eggs
Put in the rest of the ingredients one at a time, blending between each
Spray a flat pan with cooking spray and preheat on low/medium
Pour the mix onto the pan
Cook until they start to slightly bubble, this will be about 4-6 minutes. I gently test with the spatula if they’re sturdy enough to flip. HOWEVER, I flipped too early on one batch and they actually came out the best tasting and slightly gooey, but definitely the least pretty if that matters to you.
Let them cook for another minute or two on the other side, again gently testing with the spatula if it’s sturdy enough to slide under smoothly. At that point, you’re good to go, put em on a plate and serve :)
**Top with whipped cream and chopped strawberries for added romanticism
