Let me guess…You have a romantic date night coming up and you had the brilliant idea of offering to cook for them because you’re smooth like that?

Buuttt you’re both trying to eat healthy…so you need a healthy pancake recipe…

Buuuuttttt you both kinda wanna indulge because it’s a special day…

And you also don’t want to just throw steaks on the grill, you want to do something a little different.

Fear not, my friend! I got you covered. That’s what Easy Guy Cooking is all about. Getting creative, without getting too complicated.

In this romantic date night recipe, we’ll be whipping up a classic comfort food that everyone loves to eat but hates to order on the reg. Because, carbs.

You got it, I’m talking about an actual healthy pancake recipe. (Although you probably already knew since it’s in the title though #spoileralert)

*I’m not sure if we should call these healthy pancakes or healthy crepes. The only difference I see is how thick they are, and these guys do come out on the thinner side. But they are bigger than the crepes I get at this awesome crepe place down in Asbury Park, so I’m not sure where these actually qualify. Either way, just make them and thank me later.

The ingredients you’ll need for your healthy pancake recipe

We’re going breakfast for dinner on your date night recipe. And trust me, it’ll be good.

This super simple Strawberry Vanilla Protein Pancake recipe knocks down the carb level and makes it a healthy date night meal you can enjoy and not feel bad about afterwards.

The rest of your date is on you though. Sorry, bruh.

Here’s what you’re gonna do to make these strawberry vanilla protein pancakes in about a half hour:

Step 0: Go shopping for the ingredients. This is super important and CAN NOT be overlooked. Otherwise, you’re f*%ck#d. Don’t cry to me when the clock strikes meal-time and you forgot that you don’t have vanilla protein powder or a container of strawberries already.

Ok, now that we got the hard stuff out of way, wash your hands and roll up your sleeves. It’s time to hit the kitchen. And if you have one of these sexy aprons, you might as well get some use out of it now (some of these are NSFW).

Step One: Mix Up Your Healthy Pancake Ingredients

Put your ¾ cup of unsweetened almond milk and 2 eggs into the blender and blend it just enough so the eggs are beaten and mixed with the milk.

Then drop in each of the next ingredients and giving it a blend one at a time so it’s a good mix.

Doesn’t get much easier than that, right?

Seriously, I was even surprised myself when I made these for the first time. And I came up with it!

Step Two: Heat Up These Soon-To-Be Delicious Strawberry Vanilla Protein Pancakes

Spray a flat pan with your favorite cooking spray and get it heating on low-medium. I go with my stove at around a 2.5-3 (out of 9), but every stove is different so do your best here.

Once the pan is heated, pour out your dollops of the healthy pancake mix onto the pan at the desired size.

pouring-vanilla-protein-pancake-mixLet those puppies cook for about 4-5 minutes. They may start to bubble, that’s when you flip em. But for some reason these didn’t so at around 4 minutes, start to test slide your spatula under to see if they’re sturdy enough to flip. Once you’re confident it’s not all goo, make the flip.

Let them cook on the opposite side for maybe 2 minutes, again doing the spatula test. Then take em off and plate those suckers.

I was able to make about 14 of these vanilla strawberry protein pancakes. So go through as many rounds as you have depending on the size of your pan and your pouring per pancake.

Once your pancakes are plated, if you wanna sprinkle some more magic to the date night recipe, add on some extra chopped strawberries and top off with a nice pile of whipped cream 😉 (not included in the ingredient count, so keep that in mind when you’re shopping)

Step Three: Indulge

Now it’s time to serve and impress.

I’m sure a glass or 3 of champagne would help set the mood and pair nicely with your romantic evening.

You can take it from here now. Your date is impressed with your culinary wizardry and creativity. Not to mention that you delivered a healthy pancake recipe that leaves you both feeling guilt-free the next day. At least regarding the food you ate…

Ingredients:

  • 1 1/2 cups almond flour (I used Bob’s Red Mill)
  • 1/4 cup vanilla protein powder
  • 1 tsp baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsweetened almond milk
  • 2 eggs
  • 1 cup of chopped strawberries
  • *Whipped cream and extra strawberries optional

Makes 14 crepes/pancakes.

If / when I make them again, I’ll probably add in 1 teaspoon vanilla extract to sweeten them a little more.

Instructions:

  1. Put the eggs and almond milk in a blender and mix. Don’t over mix the eggs
  2. Put in the rest of the ingredients one at a time, blending between each
  3. Spray a flat pan with cooking spray and preheat on low/medium
  4. Pour the mix onto the pan
  5. Cook until they start to slightly bubble, this will be about 4-6 minutes. I gently test with the spatula if they’re sturdy enough to flip. HOWEVER, I flipped too early on one batch and they actually came out the best tasting and slightly gooey, but definitely the least pretty if that matters to you.
  6. Let them cook for another minute or two on the other side, again gently testing with the spatula if it’s sturdy enough to slide under smoothly. At that point, you’re good to go, put em on a plate and serve 🙂
  7. **Top with whipped cream and chopped strawberries for added romanticism

Total Time: 30 minutes (45 if you’re taking pics for The Gram)
